There are no paper documents but there were servers there!!! Everyone operated under these through wireless network. Can a subpoena be applied to those handling the servers all the way down to the ones shredding?

Your information is a bit off. There were no "servers" in that building. There were TWO wireless routers in the building. In the closet inside the small kitchen on the right side of the building. They were up on a shelf. Go break in and see for yourself I suppose. The Spartanburg office DID have a huge data room with a dedicated server. That equipment was removed when the office was cleared out. Where it ended up I do not know.
As to them scanning documents into a single, central server...doubtful(didn't have one). Into their private laptops? Very likely. Shredding them? Probably.
I don't doubt or ignore what you saw. You saw them shredding something. Did you actually put your hands on paper and read what was shredded? If not then you're only speculating and that won't help anyone here and only exacerbates an already complicated and stressful event in all our lives.
Yes, I do have intimate knowledge of the computer equipment in that building. I know what they did and did not have access to computer and technology wise. They had a number of printers in the office capable of scanning documents but at my last interaction with them none were attached to any particular computer.
Is it difficult to install one to a computer? No. But if you think of the sheer volume of papers needing to be scanned into a computer and depending on what speed your scanner/computer runs...that's a lot of work for 2 or 3 people to be doing in a hurry while at the same time shredding everything at the break neck pace people have said they were.
